Delightful Rocky Road





If you are on the hunt for what to gift this festive season, look no further. This Rocky Road has been my go to edible gift for a decade now. I make it a few weeks ahead, usually a very big slab or even two, and leave it in the fridge. When time comes, I cut it into squares, wrap it and voila, it turns into a beautiful gift.

It might seem like an expensive sweet to make due to the large amount of chocolate and some not so cheap nuts. However it does taste vey impressive and once all ingredients are mixed it makes a decent size block of rocky road particularly if the recipe is doubled.



Ingredients:


250g marshmallows cut in half ( I used kitchen scissors ) 1/2 cup lightly toasted pistachios, roughly chopped 1/2 cup lightly toasted macadamia nuts, roughly chopped 1/2 cup dry cranberries 2 ( 55g each ) chocolate coated bars of Turkish delight cut into bite size squares 1 cup butter cookies or any other cookies of your choice roughly chopped into bite size pieces 450g good quality dark chocolate bars 2 tsp peanut or canola oil Extra chopped pistachios and dried rose petals for topping ( optional )


For an impressive size block of rocky road double the ingredients.


Method:



1. Prepare and line with baking paper a rectangular dish 15x12cm and about 5 cm deep . If you are doubling the recipe then use a dish that is twice the size 30x24cm and about 5 cm deep.

2. Break chocolate into a small pieces, place into a heat proof bowl, add oil and melt over a double boiler or in a microwave. If melting in a microwave stir every 30 seconds to avoid cooking your chocolate. 3. In a very large mixing bowl mix all dry ingredients together. 4. Pour melted chocolate over the dry ingredients mixing spontaneously till all covered in chocolate. Move the mixture into prepared tray. Spread evenly gently pressing into place. Sprinkle the top with extra chopped pistachios and rose petals, then refrigerate for 2 hours or till set.
