Summer Bliss Nectarine Lemonade


It is time of bliss! Time of stone fruit galore, warm sunshine and the deliciously sticky sea air. I love this time of the year. Everything is buzzing, singing and is as alive as it can ever be. The summer is here!

I have spent my Sunday morning making this nectarine lemonade which my daughter called an energy drink because apparently it has suddenly energised her after she tried a spoonful of it. So now it is called an energy drink amongst my kids. They couldn't wait until it was time to finally taste the lemonade. Once the magical hour arrived and it was time, they were making very impressive looking mini mocktails and playing in the background while I was styling and getting ready for the shoot.


It is needless to say how very enjoyable this fruit drink is. The creamy texture of nectarines and the tang and aroma from the citrus made it into one intoxicating concoction. Perhaps adding a good splash of Prosecco or other alcoholic drink would've taken the intoxicating bit up a notch or two higher but I have left them out on this occasion...

Since the initially blended fruit and juice are quite thick in texture and on the palate I loosened the juice with water then added some liquid sweetener and ice just prior serving.

You could loosen the juice with a sparkling wine or even some cold tea instead of water, I can only imagine how fabulous that would taste. I did brew a big jug of tea and cooled it in the fridge however it was too late in the day to indulge in caffeinated drinks since that would have guaranteed a sleepless night for me.


Ingredients:


1 kg ripe nectarines, peeled and stones removed

6 oranges, juiced

3-4 limes, juiced (substitute limes with lemons if you haven't any limes)


Liquid sweetener such as maple syrup, honey or simple sugar syrup


Method:


Blend it all in a blender and strain though a sieve.

Add 2 cups of the lemonade mix to a jug, add 2 cups of water and 1/4 cup of liquid sweetener of your choice. Serve with ice.

As an alternative replace water with cold tea to make into an iced tea drink or add Prosecco or any other sparkling wine for a delicious summer cocktail.
